This variety is probably the richest, most direct flavoured and hottest garlic out of our paddock. If you belong to those who like to head for the spice rack, this variety is for you! Rojo de Castro is the late one around here; last one to be planted, last one to be harvested, and therefore the last one available; possibly not till February. But all good things come to those who wait! We haven’t yet got the experience, but all indicators point to this variety being able to store for 9 months and beyond. Imagine being able to lay your hands on Australian grown garlic all through winter and well into spring!
